Per la crostata utilizzare i seguenti ingredienti:
500 g di farina
2 uova
200 g di burro
1 busta di vanillina
200 g di zucchero
1 bicchiere di latte
1/2 busta di lievito
1 scorza di limone

Versare la farina su un piano realizzando una montagnetta, scavare al centro un fossetto, quindi aggiungere le uova , lo zucchero, la vanillina e la scorza di limone grattugiata. Impastare amalgamando bene e aggiungere il burro fuso ed il latte. Maneggiare e lavorare l'impasto in modo da ottenere una forma tondeggiante, riporlo quindi in un contenitore e lasciare riposare per un'ora in frigo. Stendere i 3/4 dell' impasto con un mattarello e riporlo in una teglia tonda da forno avendo cura di coprine i bordi. Bucherellare il fondo con una forchetta, versare la crema e ricoprire con la restante parte di impasto previa stesura su piano. Spennellare i bordi con l'uovo sbattuto e chiudere. Infornare in forno ventilato per 1/2 ora a 180 c°, spolverare con cannella e zucchero a velo.
